I just completed a butcher block counter for a kitchen island. It is a true end grain butcher block and I’m using a mineral oil for the top and sides.
My question is what should I finish the underside with? It isn’t accessible from the island without removing the top. I was thinking putting a wipe on poly for the underside since it will never see any cutting or food. Or should I just put mineral oil on the bottom and forget about it?
While we’re talking about butcher block, what are your thoughts about attachment? I was going to use countersunk screws in the front of the island and let the back end just expand over time. Any thoughts on that?

I like your plan for attachment it will work..
I gotta go along with Frenchy on this one aak. Unless it is for cosmetic reasons there is no need to finish the underside of the butcher block.

I made one for my island a while back. I just fastened some blocks at the corners of the underside to keep it centered on the cabinets. The weight does the rest. This way I can get to the underside for maintenence. I used the classic mix of mineral oil and parrafin. It really needs frequent renewal.
