We are turning custom fishing rod handles from a variety of woods. We have a classic challenge: How do we drill a counterbore in the handles, ranging from 1 to 6 inches? Can this be as simple as setting up a Jacobs chuck with drill bit and coming in from the tailstock end? How do we support the handle/spindle? All help gratefully received.

I don't know if this is an option, but the easiest way may be to split the billet in two and use either a table saw or router to cut the hole. A router and a cove bit would create a round hole if that is necessary.
The other option is to use the lathe, as you mention. First turn the billet round and put one end in a chuck. Support the other end with either a spindle steady or your hand. The first will work better while the latter is easier. Put the drill bit in the chuck in the tailstock and bore away. Remember that to drill a 6" deep hole, you need a bit longer than 6". I've seen installer's bits 12"-18" in diameters up to 3/8".

To avoid misalignment of your holes with the surfaces of your handles, you should drill them as raw blanks and then mount them on mandrels for turning. In other words, you create the hole first and then turn the handle around it. Take a look at pen turning systems, they solve a similar problem on a slightly smaller scale. Items like rolling pins are also done in a similar manner.

I visited a fishing rod factory a friend owns and I did notice they glued the cork handle material together in rings that had the hole already created to the desired length then they turned them to shape .
Would it be possible to do the same with wood ? You could use several colors of wood if you wanted some contrast . Use a steel pipe or rod that the glue will not stick to , to glue them up and you may be able to chuck the mandrel up and actually turn it then remove it to go on your rods .
