I am looking for a site that shows old style joinery for windows, doors and sashes on old heritage houses, you know the way they used to make them, in olden days.

Check with Breaktime. They are the folks who deal with house construction. As far as books, the old Audels carpentry books showed millwork construction of windows and doors.
The woodweb might be another good option. Many window re-production guys there. You are in for a shock when you see the tooling they use for accurate window re-productions.
