I am a beginner woodworker building diamond bins for the wine racking in my cellar.
1) How would you suggest I go about cutting the stopped dados for the shelves in the diamond bins? It’s 1×12 redwood.
2) What would be the best way to join the shelves to the carcass? Its 45 degree angles, so I was thinking of using a bsicuit joiner.

I'm a bit confused by your question. It was my understanding that diamond bins did not have shelves inside them, the bottles stacking on top of one another. So my question to you is are you putting a shelf into the corners of these diamonds? Or will there be shelves at various spots inside the area? Stopped dados cut at 45 degree angles will be pretty tricky to pull off. A through dado could be cut on the table saw. But stopped dados really, for the best safety, need to be cut on a router table or with a router.
Why not biscuit in shelf support pieces and just set shelves on top of these? They will be angled to match whatever angle you need, and can be cut more easily on the table saw. Good luck.
