I’ve had my MFT1080 table for several months now and I love the utility of the table. But my question is, do most people that have these cut into them? I haven’t been able to get myself to cut the table. I know that I can flip it over as well as replace the top (hopefully FT will still sell tops for the 1080 now that they are going to a new size table) but I just can’t get myself to cut into the top.

Yep,
1 very shallow cut in each direction, it won't hurt a thing.
BTW I'm sure you will find plenty of discussion on this on the Festool owners Group
