I'm pretty sure it is just sawn. I think it is formed by three pieces of 1x6 or so. The upper piece above the fireplace is one, and the two others are the pieces which extend left and right from there. I'm pretty sure I can see the color and grain pattern shift between the upper and lower pieces on the right side. Probably all three pieces were glued together, and then the curves were cut in them. You could do it with a saber saw, and maybe a belt sander to clean up.

Screen shots were pretty small for me, hard to see grain, etc.
I agree with Jaime -- at least that's the way I would go. I would first make a template that I could diddle with until the curve seemed right.
