I am currently building the hood for an 18th century style secretary and am using a book as a reference source. It insturcted to plane down the wood and attach it to canvas with rubbercement. Does anyone know what kind of canvas should be used?

It really doesn't matter. You can use whatever you have available. It doesn't even have to be canvas. Any heavy stiff fabric would be useable (canvas is the most likely candidate though). Depending on the size you need you could even use salvage from old blue jeans.
Try a fabric store. That's where I used to go to get heavy canvas for tambours. Art supply places should also have some.
I've done this to the inside of clock hoods, but I used hot hide glue with glycerin added to give it some flexibility ( at least in theory). I used an unbleached muslin to retain the period look. I don't know the first thing about fabric and maybe all muslin is 100% cotton, but I made sure what I bought was, so that I knew the glue would stick. There seems to be some debate over whether this fabric was added during construction or later as a repair when the hoods cracked.
