I have three logs (waulnut) that I`m haveing cut, logs are good size 26inch.The question I have is should they be quarter or plain saw.Ihave no plans yet for the boards, but they will be used for a cabenit or peice of furniture.I`m thinking one log 8/4,one plain sawn 5/4,the other quarter sawn 5/4.

Quarter it up
Quarter cut and air dried walnut is the best,in my book.I had a tree milled and dried it in my shop for a year ago
and its the best most stable walnut I've ever used. good luck.
Depends on how you want to use the wood, and whether you like arches and cathedrals or straight grain. Straight grain seems to me to present more pleasing matches between boards for tabletops and such, and I prefer rift grain for table legs. But it's a choice best made by you.

Don, if you do not have plans for any projects,is there good choice how the logs should be cut?
