Looking for advice on finishes for an ebony veneer table top that would preserve the natural look and offer some water resistance. Don’t want anything too shiny. Thanks for your advice.

What kind of usage? Does it have to resist the occasional cold glass, or more serious moisture problems?
Just about any finishing material can be made to have low gloss. Do you want a film finish at all, or the appearance of no finish?.
Have been using 50/50 mineral spirits and danish oil sanded into the grain and then wax polish. I like the natural "no finish look" but doesn't do too well with water splashes according to my customer.
Tell me more about the Danish Oil mix you were using. Was it a particular brand or did you mix it yourself? How did you apply it? Why add thinner?

If the oil mixture finish is thoroughly dry - you may be able to recoat table with a thinned wiping varnish - or poly in a flat luster.
That will toughen up the surface + it's easy to apply.
