I’ve never sprayed a finish on a piece of furniture, but am interested in adding this technique to my bag of tricks. Will a pancake (or other portable nail gun type compressor ) spray finishes, or do I need a whole different set up? Thanks in advance.

Generally no. You need a larger tank and more horse power. Each pneumatic tool has a CFM rating (cubic feet per minute) and a compressor is rated at a certain CFM rating as well. The compressor needs to provide at least the CFM rating of the tool.
With that said I have run a tool that had a greater CFM rating than my compressor for a short time. But it si not what I would recommend for a spraying.
I own the Wagner NB HVLP conversion gun as well as several detail guns by various manufacturers. My compressor is a Speedair (Graingers) 5 Hp, oil, single stage with 30 gallon tank. It keeps up very well. I would recommend that you stay away from oilless compressors. They are really noisy.
