I think the issue is project constraint - that includes both design and efficiency/effectiveness. I like dovetails, I have cut them with a router/dovetail jig and by hand. I much prefer the look of hand-cut ones. However, I should not constrain my work to hand-cut dovetails, because I think think they look better. I would never be able to build (read finish if started) kitchen if I tried to cut that many w/o a router and jig.
