I buily my dream shop back in 2008 and have been having so darn much fun in it that it should be illegal... My shop, or "The Barn" as everyone calls it, is 24 x 40 with two stories and 10 ft. ceilings upstairs and downstairs. When my wife and I lived in the city I had no room whatsoever to build a descent shop. After moving to the country in Sept 2005 I finally had the much needed land to do whatever I wanted. After a couple of years of rebuilding and renovating 2 houses I was finally able to start my shop construction.
It is extrremely well insulated with spray foam. This keeps the inside as comfortable as a bug in a rug and the moisture content of the lumber stored inside is usually around 7%.

Semi-Permanent Bench Grinder Mount
Threaded inserts keep grinder locked-down, but easily movable.
My work table often pulls double- and triple-duty for tons of shop tasks. Most often it's sharpening, but I also use it for drilling, holding bench hooks and shooting boards and occassionally as a chop-saw station. Hopefully soon, it will also hold a midi-lathe. Sounds like you got run out of town by winds and water in August '05. I didn't flood, and stayed in Metairie. I just posted my shop (Urban Shop), which I built after the storm cleared my yard for me.
I must admit I'm a little envious of the space you have.
